Chocolate Souffle

Ingredients
- 1/4 cup sugar
- 3/4 cup your choice of milk
- 3 tablespoon flour
- 1/2 cup 72% dark chocolate chips
- 1/4 cacao powder
- Unsalted butter (for baking dish)
- 1/4 teaspoon cream of tartar
- 3 large egg yolks
- 4 large egg whites
Steps
- Preheat your oven to 350 degrees F
- Lightly butter a small baking dish, coating it with sugar, and tapping out the access
- In a large heatproof bowl over a pot of simmering water, mix together the dark chocolate, vanilla, and 1/4 cup of water
- Stir until all contents are melted and mixture is smooth
- Remove from heat and allow mixture to cool to room temperature
- Combine egg yolks in cooled chocolate mixture completely. Then set aside (This is your souffle base)
- In a separate bowl, using a whisk or hand mixer, beat egg whites and cream of tartar on a medium-high heat
- Slowly add sugar and mix until stiff peaks form (do not overbeat)
- With a rubber spatula, slowly fold your egg white mixture into your chocolate mixture. Turning the bowl and folding through the center
- Transfer the mixture to your buttered dish, smoothing the top. Bake until puffed and set for 30 to 35 minutes. (Oven should not be opened. within the first 25 minutes)
- Dust with confectioners sugar
- Serve right away and enjoy to avoid the souffle collapsing!
