Chocolate Cornstarch Alfajores
If you are a cookie-lover then this is the recipe for you! These Chocolate Alfajores cookies are simply delectable. The texture is the perfect balance of soft with the slightest crispy outer layer. Alfajores are a traditional Argentine pastry made with two delicate cookies and a creamy dulce de leche filling. But what make these specific Alfajores special? The crushed white chocolate rim adds for an amazing, mouth-watering addition. Check out the recipe below!
Ingredients
- 2 cups cornstarch
- 1/2 cup flour
- 2 tablespoons (6 teaspoons) baking powder
- 1/4 cup cacao powder
- 1 cup powdered sugar
- 6 egg yolks
- 1/2 cup butter
- 1 teaspoon vanilla extract
- Dulce de Leche
- Kakaozon white chocolate
Steps
- In a bowl combine the cornstarch, flour, baking powder, and your cacao powder
- With an electric mixer or whisk, mix together the butter, egg yolks, vanilla, in a separate bowl
- Sift together the dry ingredients into the wet mixture
- Refrigerate dough at least 30 minutes
- With a circular cookie cutter, cut small circles throughout the dough
- Bake dough for 11-13 minutes at 350 degrees
- Spread dulce de leche filling on the baked cookie and sandwich them together. Spreading the filling on the perimeter as well
- Roll the sandwiched cookie in white chocolate pieces
