White Chocolate Chip Blueberry Muffins
We wanted to share one more heart-shaped recipe just in time for Valentine’s Day! These heart-shaped white chocolate chip and blueberry muffins make for an amazing Valentine’s Day breakfast surprise! The tangy sweetness of blueberries pairs wonderfully with our creamy and sweet white chocolate chips in these perfectly moist muffins. Even though we recommend using heart shaped molds for gorgeous Valentine’s Day breakfast muffins, any shape works well, making these muffins a great breakfast treat all year round!
Ingredients:
- ½ cup of unsalted butter
- 1 ¼ cups of granulated sugar
- 2 large eggs
- 1 teaspoon of vanilla extract
- 1 teaspoon of lemon juice
- ½ cup of buttermilk
- 2 cups of all-purpose flour
- 2 teaspoons of baking powder
- 1 ½ teaspoons of salt
- 2 cups of blueberries
- 1 cup of KakaoZon White Chocolate Chips
Steps:
- Preheat your oven to 375 F
- In a large bowl, cream the butter and sugar together until slightly fluffy
- Add the eggs and beat the the mixture until even
- Once the mixture is even, add the vanilla, lemon juice, and buttermilk, mixing these ingredients until the batter is a smooth texture and even color
- Using a sifter, add the flour, baking powder, and salt to ensure that there are no clumps in the dry ingredients and combine thoroughly
- Separate ½ cup of blueberries and gently smash them in a bowl with the back of a spoon or fork, adding them to the batter
- Incorporate the rest of the blueberries into the mixture
- Add the white chocolate chips, stirring until the berries and chocolate chips are evenly distributed throughout the mixture
- Fill the heart-shaped silicon muffin cups or muffin pan about 1/2 to 2/3 full of batter to ensure that the muffins can rise without spilling! (If using a pan, make sure to prepare it with a non-stick spray or line with parchment paper muffin cups)
- Top with extra chocolate chips and berries if desired!
- Bake for 30 - 35 minutes, allow to cool, and enjoy!
