No-bake Superfood Energy Bars

Vegan, Gluten-free, No bake, and filled with nourishing Kakaozon cacao. These superfood energy bars could not get anymore perfect. These are the perfect snack to give after a fun afternoon in the sun. The best part is that they are made with such simple and interchangeable ingredients and topped with chocolate! Check out the recipe below

 

Ingredients

  • Almonds
  • Seeds
  • Dates
  • Cacao powder
  • Cinnamon
  • Chocolate chips

Steps

  1. Place almonds in food processor, blend until a fine, flour-like consistency is created
  2. Into the processor, add in all of the ingredients except the dates and chocolate chips
  3. Blend until everything is well combined
  4. Slowly add in the dates to create a sticky dough (if the mixture won't stick try adding 1 tablespoon of warm water and mix again)
  5. Add the mixture from the food processor into a baking pan lined with parchment paper
  6. Press the dough tightly into the pan 
  7. Melt the chocolate down using a double boiler or in a microwave using 15 second increments and stirring often
  8. Spread the melted chocolate on top of the bars with a spatula
  9. Place the bars in the fridge for 20-30 minutes until the chocolate has hardened
  10. Take the bars out and cut into squares
  11. Serve and Enjoy! (Bars can be stored in a sealed container for 2 weeks in the fridge or 3 months in the freezer)
