No-bake Superfood Energy Bars
Vegan, Gluten-free, No bake, and filled with nourishing Kakaozon cacao. These superfood energy bars could not get anymore perfect. These are the perfect snack to give after a fun afternoon in the sun. The best part is that they are made with such simple and interchangeable ingredients and topped with chocolate! Ingredients
- Almonds
- Seeds
- Dates
- Cacao powder
- Cinnamon
- Chocolate chips
Steps
- Place almonds in food processor, blend until a fine, flour-like consistency is created
- Into the processor, add in all of the ingredients except the dates and chocolate chips
- Blend until everything is well combined
- Slowly add in the dates to create a sticky dough (if the mixture won't stick try adding 1 tablespoon of warm water and mix again)
- Add the mixture from the food processor into a baking pan lined with parchment paper
- Press the dough tightly into the pan
- Melt the chocolate down using a double boiler or in a microwave using 15 second increments and stirring often
- Spread the melted chocolate on top of the bars with a spatula
- Place the bars in the fridge for 20-30 minutes until the chocolate has hardened
- Take the bars out and cut into squares
- Serve and Enjoy! (Bars can be stored in a sealed container for 2 weeks in the fridge or 3 months in the freezer)
