Gluten Free Cookie Dough Ice Cream Sandwiches

Looking for a fun treat? Try our Gluten-free Cookie Dough Ice Cream Sandwiches. These make for a great simple no-bake treat that are amazing to enjoy on a hot day. Traditional ice cream sandwiches can make you feel bloated and aren't the best to eat. This is the perfect treat for kids to enjoy during or after a fun day outside, perfect for enjoying in the backyard or at your next family barbecue. Plus, the recipe is super easy to make vegan, just use plant-based ice cream and our 63% Dark Chocolate Chips instead! No need to worry about sugar rushes or upset tummies!

Ingredients:

  • 1 ¼ cup of almond flour
  • ¾ cup of oat flour
  • ¼ cup of maple syrup
  • ¼ cup of peanut butter
  • 3 tablespoons of oat milk
  • 1 teaspoon of vanilla extract
  • ¼ cup of KakaoZon Milk Chocolate Chips (or your favorite dark chocolate chips for a vegan alternative)
  • 1 pint of your favorite ice cream—bonus points if it’s plant based! (you won’t be using all of it)

Steps:

  1. Combine all the ingredients in large bowl and mix everything together until it is evenly combined
  2. Spread half of the mixture on the bottom of a pan, we recommend using a bread pan, or something of a similar size to cut the sandwiches more easily
  3. Add a layer of vanilla ice cream about an inch thick
  4. Spread and flatten the rest of the cookie dough for the top layer of the sandwich
  5. Freeze for about 5 hours, or until the sandwiches are set
  6. Allow it to defrost slightly and cut the sandwiches as desired
  7. Enjoy! Quickly before they melt!
